Mani Singh Khalsa, the personal chef who earned a permanent place in Michael Jackson’s trusted circle.
Their story began in the early 1980s, just before Michael’s Thriller exploded onto the world stage. At the time, Mani was working as a prep chef in a Los Angeles restaurant when fate stepped in – Michael came in to eat. So impressed was MJ by the flavours that he invited Mani to join him on the Victory tour.
In an interview with People Weekly, Mani – then just 25 – shared how challenging and rewarding it was to cook exclusively for Michael. By that point, Michael had adopted a vegetarian diet and was known to be extremely particular about what he ate. Mani recalled how even a large piece of pepper might have been too much for Michael, who had very refined preferences. Despite the challenges, Michael always appreciated the effort. A clear favourite? Enchiladas with cheese, tortillas, and hot sauce. And on tour, Mani’s sweet potato pie quickly became a team favourite!
Born and raised in California, Mani Singh Khalsa is a practicing Sikh and was associated with Golden Temple Conscious Cookery in Hollywood – a vegetarian restaurant that also catered privately for Michael. He became more than just a chef; he was a constant presence through the years, accompanying Michael on the Victory Tour (1984), the Bad World Tour (1987), and the HIStory World Tour (1996). Mani was also preparing to join the This Is It Tour before Michael’s untimely passing in 2009.
His last confirmed connection with Michael was in the early 2000s, and since then, information about Mani has been scarce. Some sources suggest he went on to open Sweet Bar Bakery in Oakland and began using the name Mani Niall. He is also rumoured to have published cookbooks, including Sweet and Natural Baking.
While he may not be a household name, fans know that Mani Singh Khalsa played a unique role in Michael Jackson’s inner world – one of care, trust, and nourishment during the most transformative years of the King of Pop’s life.
